I must admit I don't eat seafood nearly as much as I should, but I am really trying to include our sea friends into my everyday diet this season. I found such a great deal at our local market for two beautiful tilapia filets and just had to have them (that's also what I said about the Louboutin's I had to have last week). My latest food fetish is this unbelievable Dalmatia Fig Spread I eat with baguette and brie at the 5 Foot Kitchen for Wednesday Dinner Club. I get it at Gourmet Garage, or you can order it online here. If you can't find fig spread, don't fret! Simply use another jelly or jam that you love or make your own. I served this delish fish with roasted broccoli and artichokes basted with spicy butter!
Balsamic Fig Tilapia
(Serves 4)
Ingredients
4 fresh tilapia filets
1 teaspoon salt
2 teaspoons freshly cracked pepper
4 tablespoons fig spread
3 tablespoons balsamic vinegar
6 tablespoons olive oil
4 tablespoons butter
Directions
Coat the tilapia with salt and pepper.
In a small bowl mix together the fig spread, balsamic vinegar and olive oil.
Spread each filet generously with the mixture and refrigerate for 30 minutes. Let the fish sit at room temperature for 10 minutes.
Then, in a large skillet, melt the butter and cook the filets for about 2 minutes on each side.
Spoon the pan juices over the filets and serve immediately
